Gado-gado (mixed vegetables salad with peanut sauce dressing) always make a good, refreshing, not to mention easy, summer meal. This wedding salad, though look almost alike like regular gado-gado, it tastes slightly different. As regular gado-gado, this one use peanut based dressing too. The different is this one contains dried shrimp and vinegar that gives a nice tangy taste to the sauce.
I have no idea as how this salad is called wedding salad, probably because it's often served at the wedding.
Ingredients:
200 gr potato, boiled
200 gr cabbage
200 gr cucumber
200 gr green leaf lettuce
100 gr bean sprout, tails removed
3 hard boiled eggs
2 pcs firm tofu, deep fried
1 fried shallot
emping (melinjo crackers)
Sauce:
1 cup peanut butter (I use chunky pb)
50 gr dried shrimp, soaked in boiling water for about 15 minutes, drained
1 tbs sambal oelek
1 tsp salt
2 tbs sugar
300 ml water
1-2 tbs vinegar
3 tbs sweet soy sauce
Directions:
1. Slice boiled potatoes, cabbage, cucumber and deep fried tofu. thorn lettuce leaf.
Scald beansprout for about 10 seconds in boiling water, drain immediately
2. for the sauce:
With medium head, dry fry dried shrimp in a small wok, stir often, for about 10 minutes. Remove wok from the heat, cool the dried shrimp and put it in blender and process until it resembles fine meals.
3. Mix dried shrimp with peanut butter, sambal oelek, salt, sugar, water, vinegar and sweet soy sauce.
3. Arrange potatoes, cabbage, cucumber, lettuce, bean sprout, tofu and boiled eggs on a plate. Pour over the peanut sauce. Sprinkle with fried shallot and emping.

Gulai Pakis/Paku (Fiddlehead Ferns Curry)

The fiddlehead curry served with cubed rice cake, reminds me of my childhood. I often ate this thing as mid morning breakfast, bought from a stall in the marketplace.
I haven't had the fiddlehead ferns for over 20 years, though the memories linger, I can't really recall the exact taste.
Since we moved to New England last year, I've been looking forward to find this curly ferns, as they say, fiddlehead ferns is a delicacy of New England.
I've been searching the internet for sometimes to find some information on where to get them. I even thought of hiking on the wooded area across the street of our house to find them. The idea that my husband thinks as a dangerous one, because I could end up picking up some poisonous ferns.
Yesterday morning, to my delight, I found them in my local grocery. I almost jumped with joy to find this treasures. The fiddlehead fern that I'm familiar with, is slightly different from this one. Back home in Indonesia they are more leafy, and sold in bunches. But here, they only sell the curly tips of the fern. Anyway, for $3.99 a pound I think it's a bargain.
My husband never tried fiddlehead fern before, but when he tried that, he said, I need to buy more of this stuff (he's not a big vegetable eater, but he likes it).
For those who never tried this, the taste just like a very tender asparagus tips. Try it...if you like asparagus, you will definitely love this. Other than curry, you can cook them just like you cook asparagus.
the following is my version of fiddlehead fern curry (I don't have rice cubes, don't feel like making them today, but serve it with rice for an equally delicious dinner)
Ingredients:
1 lb fiddlehead ferns
1/2 lb shrimp, cleaned, leave the tails intact
1 can coconut milk (400ml)
1 stalk lemon grass, bruised
5 pieces kaffir lime leaves
4 pcs kokum (asam kandis)
1-2 tbs sambal oelek (depending on the heat tolerance)
1 tsp ginger powder
1 tsp turmeric powder
1 tsp galangal powder
1 tsp shrimp paste
1 tsp sugar
3 cups chicken broth
salt & pepper to taste
1 tbs vegetable oil for stir frying
grind to paste:
1 small onion
4 garlic
Method:
1. Heat 1 tbs of cooking oil, toss it onion & garlic paste, stir fry for 1 minute.
2. Bring in shrimp paste, sambal oelek, all the powder ingredients, lime leaves, lemongrass stalk & kokum. Stir fry for another minute.
3. Pour the coconut milk & chicken broth to the pot.
4. Bring in fiddlehead fern & shrimp.
6. Season with salt, pepper & sugar.
5. Let them simmer until fiddlehead fern become soft.

Ayam Goreng Sukabumi / Sukabumi style Fried Chicken
I love trying all kind of fried chicken's recipes, because all family members love them. We simply never got tired of them. In Indonesia they are many version of fried chicken, and this in one of those. Sukabumi is a small town in West Java, and this fried chicken supposedly comes from that region, hence the name Sukabumi Style Fried Chicken. We normally serve the fried chicken with rice, sambal (Chili paste), and lalapan (fresh/raw vegetables)
Ingredient:
1 whole small chicken (around 2 1/2 lb), cut up into 8 pcs.
1 cup water
seasoning :
3 pcs kaffir lime leaves
1 tbs tamarind paste
1 tbs salt
1/2 tbs sugar
1 knob of galangal
grind into paste:
8 shallot (1 medium size onion)
3 cloves garlic
1 tsp turmeric powder
1 tsp coriander powder
Directions:
1. Mix the chicken pieces with all the seasonings and water, put into a big pot. Bring the pot to boil, mix well, reduce to low heat, and cook until all liquid absorbed.
2. Heat oil in the deep fryer to 350F, fry chicken pieces until brown.
3. Drain chicken, and serve with rice, sambal & vegetables.

Bahan:
1 buah tomat merah ukuran kecil belah 8
garam dan gula secukupnya
2 sdm minyak goreng
bumbu halus:
6 biji cabe merah
1 bawang bombay
3 siung bawang putih
1 tomat merah ukuran kecil
1 sdm udang kering, seduh air panas

Mie Kocok sangaaaat sederhana

Lagi iseng aja tiba2 kepengen makan mie kocok. Ngubek2 buku resep...nah nemuin resep ini dari buku resep mie kuah khas Indonesia yg sudah aku modifikasi sesuai dg kondisi dapur saat itu.Setelah baca2 resepnya...kok bikinnya gampang banget ya...pokoknya resepnya super sederhana deh...makanya judulnya jadi begitu.Biasanya mie kocok dibuat pake kikil, tp berhubung ga punya kikil...belum pernah liat yg jual kikil, jadi dibuat pake daging tetelan (kebetulan sekali resepnya juga dibikin pake daging tetelan). Jangan tanya apa ini resepnya otentik...tp rasanya sih boljug....
Bahan:
500 gr daging tetelan (aku pake boneless country style ribs)
1500 kaldu
250 gr mie telor
2 sdt garan
5 siung bawang putih, haluskan
6 butir kemiri, haluskan
1 liter air mendidih
Pelengkap:
toge. seduh air panas, tiriskan
bawang goreng
irisan daun bawang
sambal
cuka
kecap manis
Cara membuatnya:
1. Rebus daging tetelan ke dalam kaldu bersama garam hingga lunak, potong2 dadu, lalu masukkan kembali ke dalam air rebusan.
2. Tumis bawang putih, kemiri hingga wangi, masukkan ke dalam rebusan kaldu.
3. Rebus mie telor, kocok2, tiriskan.
4. Letakkan mie, dan toge ke dalam mangkuk, siram dngan kaldu panas beserta potongan daging.
5. Taburkan bawang goreng, daun bawang. Sajikan dengan sambal, kecap manis dan cuka

Rujaaaaak......

Udara udah mulai anget....enak makan yg seger2 gitu. Pas kemaren dulu ketoko Asia ketemu mangga muda....hi...jarang2 nih ada mangga muda, langsung beli deh. Udah kebayang didepan mata...duh sedapnya makan rujak. Cuman sayang stock gula jawa lagi menipis, jadi pake brown sugar aja, meskipun penampilan sausnya ga seseksi kalo pake gula jawa....rasanya tetap bikin merem melek..pokoknya asyiiik deh. Maunya sih pake jambu air, kedondong gitu...tp nyari dimana buah2 begitu. Akhirnya pake buah lokal aja deh, apel ijo dan si cantik strawberry yg kebetulan udah mulai musim. Strawberry dijadiin rujak...? boleh dong...kalo rujaknya made in USA...he..he..he..namanya juga rujak amrik...

Kue Lapis a.k.a kue pepe

Niat bikin kue lapis udah lama banget...tapi selama ini selalu belum punya nyalih..takut gatot soalnya. Tapi kemaren niat buat makan kue lapis udah ga terbendung lagi, akhirnya dengan semangat 45 aku langsung buat. Ternyata ketakutan selama ini ga beralasan..bikinnya ga susah2 amat...malahan motongnya lebih susah dari bikinnya......Soal rasa...mmmmm...out of this world...ini kata gw lho...soalnya udah pengen banget dan ga seperti Nita yg bisa nyari sandal langsung ke pendawa...
Ingredients:
250 gr tepung sagu (tapioca starch)
100 gr tepung beras
1/2 sdt garam
250 gr gula pasir
1 sdt vanilla essence
2 kaleng santan (800 ml)
pasta pandan dan pewarna sesuai selera
Directions:
1. Didihkan 200 ml santan.
2. Cairkan 50 gr tepung sagu dg 50 ml santan, lalu tuangkan 200 ml santan mendidih, aduk rata
3. Masukkan gula kedalam adonan, aduk rata, dan dinginkan
4. Campur 200 gr tepung sagu, tepung beras, vanila, dan garam, aduk, dan tuangkan ke dalam adonan yg telah didinginkan tadi.
5. Tuang sisa santan ke adonan pelan2 sambil diuleni hingga menjadi adonan yang licin
6. Bagi adonan sesuai selera untuk diberi warna/pasta pandan
7. Siapkan loyang ukuran 20X20 cm, olesin minyak goreng.
8. Panaskan kukusan
9. Tuang adonan putih sebanyak 6 sdm, kukus 5 menit, beri lapisan warna lain, kukus 5 menit lagi, begitu seterusnya sampe adonan habis
10. Setelah adonan abis, kukus lagi selama 30 menit sehingga seluruhnya matang.
Note : kue harus ditunggu sampai bener2 dingin sebelum dipotong.

Ayam Pop Garing

Kalo denger nama ayam pop pasti yang kebayang ayam resto padang yg warnanya putih. Tapi aku tuh suka makan ayam yang rada garing2 a.k.a. yang warnanya rada kecoklatan. Jadilah bikin ayam pop yang rada garing...istilahnya ayam pop abis suntan.
Eniwei, apalagi yang enak mendampingi ayam pop kalo bukan sambalnya dan daun singkong. Lagi2 disini butuh kreativitas, berhubung ga punya daun singkong, daun apalagi yang bisa standby jadi penggantinya kalo bukan kale. Sayangnya lagi ga punya teri medan buat bikin sambalnya, untung masih punya beberapa biji pete simpenan...lumayan deh...
Bumbu ayamnya sendiri sama dg yg ayam pop yg putih, cuman kalo yg putih gorengnya cuman dicelup sebentar diminyak panas, yg ini digaringin aja dikit.
Bahan:
1 kg ayam tanpa kulit (aku pake tanpa tulang juga biar gampang makannya)
2 sdt garlic powder (5-6siung bawang putih, haluskan)
1 sdt garam (kurleb)
2 sdm air jeruk nipis
250 ml air kelapa
minyak untuk menggoreng
Bahan sambal:
15 bh cabe merah
10 bawang merah (aku pake 1 bawang bombay)
2 tomat ukuran kecil
10 mata petai
1 sdt terasi bakar
1/2 cup air sisa rebusan ayam
minyak goreng
garam & gula sesuai selera
2 sdm teri medan goreng (kalo ada)
Pelengkap:
daun kale rebus
Cara Membuatnya:
1. Potong2 ayam sesuai selera, lumurin dengan bawang putih, garam, dan jeruk nipis. Diamkan selama 30 menit.
2. Jerangkan air kepala diatas api sedang, masukkan potongan ayam berbumbu, rebus dg api kecil sampe air agak mengering.
3. Angkat ayam, goreng dg minyak panas, sesuai selera (putih / garing)
4. Untuk sambal: Haluskan cabe, bawang, tomat dan terasi. goreng di minyak yg agak banyak. Masukkan garam dan gula serta petai dan teri. aduk rata. Masukkan air sisa rebusan ayam, masak lagi beberapa saat, angkat.
5. Sajikan ayam panas2 dengan sambal dan rebusan daun kale...jangan lupa nasi sebakul.

Mie Goreng Jawa....Maksain...

Idenya dari mau mendaur ulang kelebihan ayam goreng kuning. Pikir2 bikin mie goreng jawa aja....udah lama banget soalnya ga makan mie satu ini. Tapi kebetulan ga punya mie keringnya...ya udah...pake yang ada aja. Pilihan jatuh pada spaghetti...jadi mestinya judulnya spaghetti goreng jawa..tp karena takut ditimpuk sama Yami, jadi pake judul mie goreng jawa maksa aja..he..he..
Bahan:
400 gr thin spaghetti, rebus sesuai petunjuk boxnya
3 potong ayam goreng kuning, siap pakai
2 wortel, potong korek api
3-4 tangkai sawi, potong2
2 butir telur, diorak-arik
1 batang daun bawang, iris halus
3 sdm kecap manis
1 sdm gula
1 sdm kecap asin
4 siung bawang putih cincang
1 siung bawang bombay, iris halus
6 butir kemiri, haluskan
½ sdm bubuk kaldu ayam
½ sdt garam halus
3 sdm minyak goreng
bawang merah goreng untuk taburan
Cara Membuatnya:
1. Panaskan minyak, tumis bawang bombay, bawang putih, kemiri hingga wangi.
2. Masukkan wortel & ayam, aduk2
3. Masukkan gula, kecap asin, kecap manis, bubuk kaldu dan garam, aduk rata
4. Masukkan spaghetti dan daun bawang, aduk rata
5. Masukkan sawi, aduk sampai sayuran layu
6. Angkat, taburin orak arik telor & bawang goreng

Bubur Ayam....Jalan Pintas...

Biasanya kalo bikin soto ayam bikin ayamnya lebihan, besoknya bisa disulap jadi bubur ayam....lumayan...jalan pintas..he..he..he..., palagi kalo lagi males masak... pelengkapnya gampang tinggal beli cakwe, roasted soy nuts (kedele)...jadi deh spt bubur ayamnya abang2..
Paling gampang bikin bubur ayam di rice cooker. Sebagian rice cooker emang ada fungsi buat masak buburnya, kalo ga ada juga bisa. tinggal buka aja tutupnya selama proses masaknya sambil sesekali diaduk.
Bahan:
200 gr beras
2 liter kaldu/sesuai selera kekentalan
1 lembar daun salam
garam secukupnya
Pelengkap:
ayam suir2 (dalam hal ini sisa bikin soto ayam)
cakwe iris2
kacang kedele
daun bawang, iris
kecap manis (optional)
kecap asin
sambal
Cara Membuatnya:
1. Masak beras beserta kaldu dan daun salam serta garam di rice cooker. Tambahkan air jika perlu (tergantung berapa kental yg diinginkan).
2. sajikan beserta semua pelengkapnya.

Soto Ayam

Ini salah satu hidangan yang cocok buat musim dingin....anget, pedeees pokoknya sip deh. Paling asyik dimakan sama perkedel, tp kalo lagi males bikin perkedel, pake potato chips juga enak...favoriteku yg merk cape cod assoy banget...ini bukan promosi lho...tapi cobain deh enaaak banget, rasanya spt homemade potato chips (padahal aku juga belum pernah bikin potato chips). Aku biasanya beli di costco yang sebungkus gede itu. Eh...kok ceritanya jadi potato chip..ayo deh lanjutin lagi tentang si soto ini.
Kalo buka buku resep, banyak banget versi soto ayam...sampe bingung mo ngikutin yg mana...akhirnya ya udah karang aja sendiri...rasanya OK juga kok..hi..hi...promosi lagi..
Bahan:
1 lb ayam
1 bawang bombay, haluskan
5 siung bawang putih. haluskan
1 sdt bubuk jahe
1 batang sereh, potong2
5 lembar daun jeruk
1 sdt bubuk kunyit

Martabak Manis Super Special

Sebenarnya aku udah cukup sering bikin martabak manis dengan berbagai macam resep, baik yg pake ragi ataupun tanpa ragi. Kebetulan resep yg satu ini yg rasanya paling cocok dg lidahku. Berhubung lagi ga punya meises, jadi coklatnya diganti pake nutella aja...cukup gampang, rasanya emang agak lebih manis daripada paka meises. Cara membuatnya cukup gampang, hanya memakan waktu lebih lama daripada yg tanpa ragi.
berhubung tidak punya loyang martabak, jadi bikinnya pake penggorengan teflon ukuran 30 cm. Kalo soal kalori,...mmm...mesti merem deh, namanyakan udah super special, jadi hari ini makan martabak dulu, besok baru diet...
Bahan: (untuk 2 loyang ukuran 30 cm)
500 gr tepung terigu
1 bungkus instant yeast (7gr)
50 gr gula pasir
1/2 sdt baking powder
1 sdt garam
500 ml susu
1 sdt baking soda
mentega secukupnya (utk olesan)
gula pasir untuk taburan
2 butir telur
1/2 sdt baking soda
bahan isi:
susu kental manis
kacang tanah sangrai, cincang
hazelnut spread (nutela)
keju parut
Directions:
1. Taruh tepung, gula, yeast, baking powder, garam di mangkuk besar, aduk rata.
2. Tuangkan susu secara perlahan2 ke adonan tepung, aduk rata.
3. Diamkan adonan sampai mengembang dua kali lipat. di musim dingin, biasanya aku taruh adonan di dalam oven, sambil lampunya dinyalakan.
4. Kocok telur, lalu masukan telur dan baking soda ke dalam adonan yg telah mengembang, aduk rata.
5. Olesin wajan nonstick ukuran 30 cm dg mentega, panaskan di api kecil.
6. Setelah wajan panas, tuang 1/2 dari adonan.
7. Tunggu sampe adonan berlubang2, taburi dg gula pasir ke permukaan martabak.
8. Tutup wajan, dan masak dg api sangat kecil sampai matang (kira2 30 menit)
9. Setelah martabak matang, pindahkan ke piring, olesi permukaan dengan mentega yg banyak, terus olesin dg susu kental manis.
10. Olesi dg hazelnut spread, taburi kacang dan keju parut.
11. Lipat martabak, dan olesi kulit luarnya dg mentega.
