Chocolate Chocolate Chips Muffins




Chocolate is the big thing in our house. Anything chocolatey will disappear in the blink of an eye.
I found this recipe here, and baked them in the evening for the next day breakfast.
However, the whole family couldn't resist the temptation to try some once they were out from the oven.

The muffins are piece of cake to make and taste very delicious..especially when they are still warm.

Ingredients
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons best quality cocoa powder ( I used dutch processed cocoa)
3/4 cup superfine sugar
3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
1 cup milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon pure vanilla extract
Directions
Special equipment: Muffin tin with paper muffin cases

Preheat the oven to 400 degrees F.

Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.

Bolu Pandan





Bolpan adalah salah satu kue favoriteku. Bikinnya udah sering, tp kenapa hasilnya ga seperti yg diphoto2 gitu...bolunya tinggi bagus, sedangkan punyaku kok pendek...padahal ga bantet krn texturenya lembut seperti kapas.Setelah baca2 sana sini akhirnya aku baru menyadari ternyata selama ini aku memakai loyangnya yg ukuran 10 Inc, sedangkan kebanyakan resep itu memakai loyang 9 inc. Kemaren ini aku coba lagi buat dengan adaptasi untuk loyang 10 inc....hasilnya....siiiip deh...kuenya cantik tinggi gitu. Berikut ini adalah resep yg aku pake untuk loyang 10 inc...mending cepet2 aku catet sebelum lupa.

Bahan:

300 gr tepung terigu

1 1/2 sdt baking powder

3/4 sdt vanilla

11 kuning telur

75 ml minyak goreng

300 ml santan

11 putih telur

3/4 sdt garam

300 gr gula pasir

3/4 sdt cream of tartar

pasta pandan beberapa tetes


Cara Membuatnya:

1. Panaskan oven 360F, siapkan cetakan chiffon tanpa diolesi mentega

2. Campur tepung terigu, baking powder dan vanila dalam satu wadah, buat lubang ditengahnya. Masukkan kuning telur kedalam lubang, aduk rata, masukkan minyak dan santan. Kocok hingga rata.

3. Masukkan pasta pandan, aduk rata

4. Dalam wadah terpisah, kocok putih telur dan garam hingga berbuih, masukkan gula sedikit demi sedikit sambil dikocok terus hingga gula habis.Tambahkan cream of tartar, kocok sampe kaku

5. Masukkan kocokan putih telur kedalam adonan tepung, aduk perlahan2 hingga adonan rata. Tuang kedalam cetakan.

6. Panggang kira2 60 menit.

7. Keluarkan cetakan dari oven, telungkupkan sampai dingin. Keluarkan dari cetakan dg bantuan pisau.
