
New England shoreline is famous for its lobsters. As the weather warms up, lobsters are more abundance and the price became very reasonable too. Last month we had a chance to spend spring break in Maine and of course to feast on lobsters. We went to Portland fish market to get some fresh lobsters. The big lobster was $9.99/lb and the smaller one (1-1 1/4lb) was $7.99/lb. When I lived in the South, lobster never cost less than $11.99/lb.
Imagine my surprise when my local grocery had a sale on lobsters for $4.99/lb on memorial day weekend. Actually in my town, every Friday there is a seafood truck that sells fresh lobster and fish directly from Maine, but I have yet to check it.
Every spring I always cook some low country boil, but this year I just prepare something simpler. No sausages, crabs or potatoes, just 3 main ingredients, lobsters, shrimps and corn boiled down with old bay seasonings and we had a wonderful evening with those shellfish. Next time probably I'll cook Chinese style lobster.

Crispy Shrimp
This is the kids' favorite shrimps..very easy to make & taste delicious too, especially when cooked with a very fresh shrimp. I like to eat the shrimp dipped in the japanese style spicy mayo. I got the idea of the spicy mayo after having sushi in the restaurant, where they served them with the spicy mayo. Curious, I asked the waitress about it, and she said it's only a mixture of japanese mayonnaise and sriracha chili sauce. Now, the dipping sauce becomes the family favorite.
Ingredients:
1 lb big size shrimp, remove shells, cleaned and leave tails intact.
pinch of salt & pepper
for the coating:
75 gr cornstarch (approx.)
1 tsp garlic powder
1/2 tsp pepper
1 tsp salt
1 egg white, whipped
100 gr panko (coarse bread crumbs)
spicy mayo: mix together:
Japanese mayo
sriracha chili sauce
Directions:
1. Sprinkle the salt & pepper over shrimp, toss, and leave to marinade for 1/2 hour.
2. Mix together corn starch, salt, pepper and garlic powder.
3. Toss the shrimp to the corn starch mixture, make sure they are evenly coated.
4. Dip the shrimp into the egg white.
5. Roll the shrimp into the bread crumb, press with fingers as you go along, to make sure the bread crumbs stick to the shrimp.
6. Leave shrimp for around 2 hours (you can keep them in the fridge)
7. Heat deep fryer at 350F, and fry the shrimp until they turn golden brown.
8. Serve with spicy mayo or ketchup and finely sliced cabbage.

Udang Saos Mentega

Ini salah satu olahan udang yg paling sedap deh...hasil adaptasi dari primarasa, sausnya itu asyik banget dimakan pake nasi anget..tentu aja udangnya juga enak.kalo lagi makan bisa sampe ngejilat2 jari....

Bahan:
20 ekor udang utuh ukuran besar (kira2 1 kg),
1/2 sdt garam
10 sdm butter (1 stick)
3 siung bawang putih, cincang
2 cm jahe cincang
6 sdm saus tomat (ketchup)
1 sdm kecap asin
1/2 sdt gula pasir
1 sdm cuka
2 batang daun bawang iris serong
1 sdt tepung kanji larutkan dalam 100 ml kaldu/air
1 sdt saus inggris (worchestershire sauce)
Cara Membuatnya:
1. Belah punggung udang, bersihkan, biarkan kepala dan ekor utuh.
2. Lumuri garam dan diamkan selama 5 menit
3. Panaskan 5 sdm mentega, goreng udang sampai berubah warna, jangan kelamaan nanti udangnya alot.
4. Tambahan 5 sdm mentega kepenggorengan bekan menggoreng udang, tumis bawang putih dan jahe hingga wangi.
5. Masukkan saus tomat, kecap, gula, cuka dan daun bawang aduk rata
6. Tambahkan larutan tepung kanji, aduk
7. Masukkan udang, aduk, dan segera angkat

Udang Berselimut

Dimusim dingin bukan cuman org aja yg pengen pake selimut, udang juga kedinginan pengen berselimut kulit lumpia.
Kita sekeluarga emang doyan banget makan udang, makanya aku selalu mencari variasi untuk memasak udang, biar ga bosen.
Resep ini aku dapatin dari buku masakan thailand. Rasanya kombinasi antara makan udang dan lumpia...kriuk2...asyik banget kalo dicocol di sambel lumpia manis thailand. Biasanya aku beli yg di botol yg ada tulisan Mae Ploy. Tapi kalo ga ada aku lampirin juga resep sambalnya.
Resep ini bisa dibikin versi pedes ato ga pedes. Aku bikinnya yg ga pedes biar para unyils bisa ikut partisipasi
Bahan:
20 ekor udang ukuran besar, kupas kulitnya tinggalkan ekornya, bersihkan
20 lembar kulit lumpia (aku pake yg ukuran kecil)
3 siung bawang putih, cincang
1 cm jahe, cincang
2 sdm saus tiram, kalo mau pedes ganti dg 1 sdt thai red curry paste
garam dan lada secukupnya
Untuk saus pedes manis:
7 biji cabe merah panjang, buang bijinya, haluskan
3/4 cup cuka
8 sdm gula
1/2 sdt garam
Cara membuatnya:
1. Supaya lebih gampang dibungkus, kerat2 badan udangnya.
2. Di mangkok besar, campur bawang putih, jahe, udang, saus tiram, lada dan garam. simpan di kulkas selama 2 jam
3. Tiriskan udang, bungkus dg kulit lumpia, biarkan ekornya keluar
4. Goreng udang sampai garing
5. Untuk sausnya :Di panci kecil, didihkan cuka, gula dan garam, aduk2. Kecilkan api, masak terus sampai agak kental, sekitar 15-20 menit. Masukkan cabe, aduk2 masak lagi sekitar 5 menit. Siap disajikan.

Sambel Goreng Udang Tauco
Bahan: 200 gr cabe hijau potong serong (buang bijinya bagi yang tidak suka terlalu pedes) 2 buah tomat belah 4 100 gr pete (kalau suka) 500 gr udang besar buang kulit, tinggalkan ekornya. 2 blok kaldu garam dan gula sesuai selera 4 sdm minyak goreng bumbu: 1 sdm tauco haluskan 1 bawang bombay cincang 3 siung bawang putih cincang halus 1 sdm (sesuai selera) sambal oelek (saya pake yang dari botol) 2 cm lengkuas (saya pakai 1 sdt galangal powder) 2 batang serai 2 lembar daun salam Cara membuatnya: Panaskan minyak goreng dan tumis bumbu sampai wangi. Masukkan cabe hijau dan tomat. Setelah mendidih tambahkan 1 cup air and kaldu. Masukkan pete dan udang. Tambahkan garam (cicipin dulu, soalnya tauconya cukup asin) dan gula sesuai selera. Setelah mendidih kecilkan api dan masak sampai agak kental.

Udang Cereal

Udang goreng cereal adalah salah satu olahan udang yg kusukai. Resep aslinya memakai daun kari, tp yg ini aku modifikasi dengan memakai daun jeruk soalnya lagi ga punya daun kari. Rasanya assoy banget deh palagi kalo dimakan dengan nasi anget...dijamin pasti nambah2 deh...
Bahan:
1 lb udang utuh ukuran besar (kira2 20 ekor)
2 butir telur, pisahkan putih dan kuningnya
2-3 sdm tepung maizena
6 sdm mentega
3/4 cup quick cooking oatmeal 1 tangkai serai potong2 6 lembar daun jeruk, sobek2 1sdt bubuk kaldu ayam 4 biji cabe merah, iris2 lada dan garam secukupnya 1 sdm angciu Cara membuatnya: 1. Kerat punggung udang dan bersihkan (kulit & kepala udang jangan dikupas). Taburi 1/2 sdt garam dan angciu, biarkan selama 15 menit. 2. Kocok putih telur 3. celup udang ke dalam tepung maizena, lalu ke putih telur, lalu balut lagi dgn maizena. 4. Goreng udang dalam minyak panas sampai matang, tiriskan 5. Di penggorengan terpisah, panaskan mentega sampai meleleh, masukkan serai, daun jeruk, dan cabe, serta oatmealnya. Aduk terus sampe oatmeal berubah warna dan mengering. 6. Masukkan udangnya, aduk rata dan siap disajikan
